Review #847 - SMWS 53.501 'A Barbecue at Sea, Under Full Sail' - Caol Ila 16 Year

Like the peaty Loch Lomond single cask named ‘A Distant Campfire After Rain’ that we previously looked at, this Caol Ila bottling from the Scotch Malt Whisky Society is a little bit more special than the average Society bottle to us. That’s because we helped select it for bottling during the SMWS Tasting Panel Experience in 2025; we first tasted this as a cask sample in March, and later in the year, it was selected for bottling based on voting from the SMWS members that attended the tasting series.

When we first tasted this in March 2025, the age was actually 15 years, but by the time it was bottled, this Caol Ila had moved on to 16 years old. It spent that full maturation time in a first fill ex-bourbon hogshead; because of the decent maturation length in a first fill cask, we’re expecting some of the youth to be rounded off, and some complexity to have developed. The fact that it’s a bourbon cask, though, means that lovely Caol Ila distillate character shouldn’t be fully covered up.

The bottling strength is 54.9% ABV, and this hasn’t been chill filtered or tainted by added caramel coloring.

Details: Not chill filtered, no color added; distilled March 5, 2009; 254 bottles

Tasting Methodology: Reviewed 3 times over 4 months; bottles at 90%, 70%, and 50% fill levels at times of review. Tasted in a nosing glass each time, rested 15+ minutes

Nose: Peppery, salty, ashy, and full of citrus fruit: limes, lemon curd, savory orange. The peat smoke has a medium strength, and we get charcoal and a bit of peppery spice as accents. Seaweed, chalky malted grains, and a hint of tobacco are accents; it grows even more salty with time.

Palate: The mouthfeel is medium-thick; punchy peat, accented by peppery notes and some sharp lemon fruit arrive first. Wood smoke, slightly musty, combines with slate and dry oak. Lemon-lime soda water, creamy vanilla, and lemon sorbet build behind the smoke.

Finish: Lots of mineral notes, combined with delicate flavors like lavender, heather flowers, and effervescent peat. Good intensity continues, but this is also nicely measured and refined; ash, subtle smoked meats, white pepper, and salt linger in the aftertaste. It's a long finish.

Final Note: This is a beautiful, classic ex-bourbon example of Caol Ila in its teenage years. There's nothing exotic coming from the casks here - just bulletproof Caol Ila distillate, showing off that combination of peat, coastal salinity, great texture, and bright fruits. This whisky is old enough to have developed some nice complexity, but it still sticks to the distillate-forward side of the flavor spectrum overall. This is a very good bottle, one that any Caol Ila fan would be happy to have.

Value is a bit below average, though, since the price here is $185. That's well over $10 per year of aging; Caol Ila from independent bottlers has definitely gotten more expensive in recent years, but for us, this price is pushing the envelope a bit.
