Review #917 - Bunnahabhain 12 Year Cask Strength 2025 Edition

Bunnahabhain's 12 Year Old single malt is a bona fide Islay staple. Despite the lack of peat smoke, which is a classic characteristic of whisky from this region, the heavy sherry influence in Bunnahabhain's core range has made it a fan favorite. The usual bottling strength is 46.3% ABV, but in 2021, the brand introduced an annual cask strength version; here we have the 2025 Edition, which is bottled at a strength of 56.4% ABV.

Like the usual Bunnahabhain 12, this cask strength version focuses on sherry cask maturation. The distillery explains on their website that this year's release uses predominantly second fill Oloroso casks, but they round out the profile with the addition of a limited amount of first fill sherry and refill sherry.

Bunnahabhain also tells us on the label that this Islay whisky is not chill filtered, and it contains no added color - all of the signs are looking good so far.

Tasting Methodology: Reviewed 3 times over 3 months; bottles at 100%, 90%, and 80% fill levels at times of review. Tasted in a nosing glass each time, rested 15+ minutes

Nose: Strong caramel and plentiful dark fruits, as well as some nice perfumed oak - almost smells older than 12 years. Raisins, acidic prunes, a bit of tart dark chocolate, as well as some sulphur from the cask... orange blossoms, blood orange, and medjool dates come next. We also find hints of wood smoke.

Palate: The mouthfeel is medium-thick. Lots of orange and dark stewed fruits like raisin and prune start us out, but we also get a decent sulphur note, as well as a vague savory flavor. Wood spice, tangy cranberry, and tart strawberry come next; we also found hints of cherry, plum, vanilla, and caramel across our tastings. It's quite punchy and intense.

Finish: Tart red fruit like strawberry and raspberry, sweet caramel and brown sugar, and then a bit of medjool date and acidic prune return. Perfumed oak, a little bit of bitter tobacco, and then we find more baking spices: cinnamon, clove, and pepper. Notes of syrupy cherry, malt, and wood spice linger in the aftertaste, and it's a medium-long finish.

Final Note: To be honest, when we first tried this, we were a bit underwhelmed considering the price and reputation. However, it's getting better in every subsequent tasting - this is a whisky that really benefits from some air time, both in the bottle and in the glass. The flavor profile focuses on dark fruits of course with that heavily sherried maturation, but we also get nice red fruit flavors, some baking spice, and a decent amount of oak influence. This is a very good single malt, a nice step above the standard Bunnahabhain 12 Year.

Despite this being a good Islay single malt, we're not so sure about the value proposition, at least at the price this sells for in our area ($150). Based on some quick research, it seems this goes for the equivalent of $20 to $40 less in other places, which would improve the value; at our local price, the value score is just okay, mediocre.
